Coles on Friday confirmed its operating hours to Monday inclusive would be 9am to 6pm and that it had temporarily closed its deli.
Woolworths also confirmed it had temporarily reduced trading hours across its three Dubbo stores to 8am to 7pm daily.
The change was while a number of team members isolated and underwent testing after COVID-19 exposures, a Woolworths spokesperson said.
"We thank our customers for their ongoing support and patience as our teams work hard to serve the additional demand during lockdown," the spokesperson said.
"The well-being of our team is our priority and we will be supporting them while they isolate in line with health advice.
"We ask customers to continue to treat our team members and each other with respect as we work through this unsettling time together."
Dubbo Square, the shopping centre Coles is located in, advised of the supermarket's changed trading hours on Thursday.
It comes after Dubbo's venues of concern reached 70 by Thursday, and among them was Coles with occasions on August 11, 12, 13 and 17 when people attending became casual contacts.
"Due to team member availability at Coles Dubbo, we have introduced a number of measures to enable us to continue to serve the community," a Coles spokesperson said.
It included reducing trading hours and temporarily closing the deli, the spokesperson said.
"We know that for some customers, coming into our stores may not be possible and we are seeing increased demand for Coles Online," the spokesperson said.
"We are working hard to increase capacity, however, we have unfortunately had to cancel a number of home delivery and Click&Collect orders that we have been unable to fulfil.
"We understand this has caused some frustration and we appreciate our customers' patience during this time."
The retailer asked all customers to check-in every time they visited any of its stores.
"QR code posters are located at the front of the store, in-store on sanitiser stations, and at the checkout so customers can check in at any time while they do their shopping," the spokesperson said.
"We have been pleased to see customers complying with the measures in place to continue to keep our team members and customers safe."
The Daily Liberal understands Aldi's Dubbo store reduced its trading hours on Monday and Tuesday but reverted to normal hours on Wednesday, which has continued through the rest of the week.
Dubbo was placed in a snap lockdown on August 11, which was initially for seven days, but was on Thursday extended for at least another week.
