Watson will return to the Sydney Roosters on a two-year-deal after playing 38 games with the club before joining the Knights in 2018.
Watson had struggled to cement a spot in the Knights starting 13 for much of his time with the club and has been the club's swiss army knife featuring in a range of positions this season so far including hooker, fullback, lock and five-eighth.

It was a lock, where Watson lined up for the Knights on the weekend it what was his 100th NRL match in a 14-12 win over Cronulla.
On Tuesday, afternoon Newcastle released a club statement confirming Watson was heading to the Roosters.
"The 25-year-old remains fully committed to finishing the 2021 season and his time at the Knights with the commitment and tenacity he has always shown throughout his career," the statement read.
"Our team's focus now moves firmly towards our match this weekend against the Bulldogs.
"The Knights wish Connor and his family all the best in their future endeavours."
Returning to the Roosters, will benefit both Watson and his new club going forward.
The Roosters have been plagued by injuries and forced retirements throughout the season including Boyd Cordner and Jake Friend while Watson has shown he is more than capable of covering a range of positions.
Watson's relationship for current Roosters coach Trent Robinson is also believed to be a big factor in the 25-year-olds move back to Bondi.
