By Wednesday the list of cafes, restaurants, hotels and other eateries participating in the dine category had grown to 72, the Service NSW website shows.
There was a total of 16 participating businesses in the discover category.
The 88 participating across both categories is a rise from the 52 businesses that had signed up by March 23.
The $500 million NSW government program offers residents aged 18 years and over four vouchers together worth $100.
Two $25 vouchers are for eating in at restaurants, cafes, bars, pubs and clubs, and two $25 vouchers are to be used for entertainment and recreation, including cultural institutions, live music, and arts venues.
The vouchers are valid until June 30, 2021.
Business NSW has encouraged businesses across the west to sign up.
"This was a popular announcement from last year's state budget, and it's important our region's businesses in tourism, hospitality and entertainment register now to benefit from the program," Business NSW western NSW regional manager Vicki Seccombe said last month.
"We estimate that this program can potentially inject [more than] $24 million into western NSW.
"Minister for Customer Service Victor Dominello told business owners at a recent webinar hosted by Business NSW that on average, residents are spending around $42 when utilising one of their four... vouchers.
"This increase in spending will see the government's $24 million potentially turn into $40 million when residents spend in our local cafes and restaurants, cinemas and activities like paintball and bowling."
