Cold Rock Ice Creamery is a frequent visitor to town during the warmer months and recently more food trucks have been getting involved.
Saturday saw vendors Birdman Food Truck, Wafflepopz and American BBQ Kitchen all in town.
Head Chef for Birdman Food Truck and American BBQ Kitchen JR Boukarim says coming to Dubbo is always fun.
"Dubbo is a beautiful town that we used to visit often as a family. We enjoy giving the locals food that's not on offer to them on a daily basis and they in return help our business survive by supporting us. We love to mingle with the local community and look at other business opportunities and where we can help them," Mr Boukarim said.

Due to a disrupted 2020, Mr Boukarim says things have changed for his trucks but he is thankful for towns like Dubbo.
"Prior to COVID we used to set up at a lot of music festivals and work closely with clients to accommodate the food at various locations around Australia. This included the Easter Show, Royal Randwick Racecourse including Rosehill and various other council events. They were all cancelled and without random food truck pop ups we wouldn't be in business,"
Hundreds visited the three food trucks on Saturday and it's this popularity that constantly brings Mr Boukarim back.
"Our product is always popular when we travel around New South Wales. we're fortunate enough to accommodate both of our cuisines out of the one truck in order to spread out the demographic and target market. our food is attractive taste great but comes at a price because we use high quality ingredients."
Mr Boukarim said the plan was for the trucks to return every six to eight weeks.
