Mark Anthony Anforth, 46, used a 25-centimetre knife to stab his male victim outside a unit complex in Gilbert Street on January 13.
According to a statement of agreed facts presented in court, the pair had a fight after Anforth was accused of stealing a television at about 12.30am.
After Anforth inflicted chest and flank stab wounds, the victim bit a portion of Anforth's ear lobe off in self-defence.
Anforth threw the knife away and police later located it outside, along with part of Anforth's ear lobe.
According to the statement of agreed facts, Anforth told police he caused the wounds in an effort to defend himself.
The victim was treated at Dubbo Base Hospital and made a full recovery.
In Dubbo Local Court on Wednesday Anforth pleaded guilty to breaching an apprehended violence order and wounding with the intent to cause grievous bodily harm.
He is due to be sentenced on October 18.
