When she first started selling cakes, Amy Rutherford said making three was a really busy week. Now the baker averages seven a week, squeezing them in between a full-time job and raising two young children.

Ms Rutherford’s masterpieces have exploded in popularity on social media. The cakes usually stick to the traditional vanilla or chocolate, and are then filled with flavoured buttercream like Nutella, Oreo or Tim Tam.
“I like it to be a little bit different and something people get excited about. More of a dessert than just cake,” Ms Rutherford said.
Now Ms Rutherford has her own space on Palmer Street to bake and decorate the delicious treats.
It’s a familiar spot. A few years ago Ms Rutherford and her sister started the Palmer Street Store.
“But then we both got pregnant so obviously it wasn’t the right time for the shop. We had to leave that one behind but I’ve always loved this shop so it’s good that I could come back to it,” she said.
“Hopefully I’ll be in here a lot longer.”
Having to fit the making and decorating in with the rest of her hectic schedule, Ms Rutherford said she couldn’t actually say how long it takes her to make one of her creations from start to finish. She’s yet to bake, decorate and set a cake in a single session.
“I just like being creative. Most of the time I just do what I like to do. It got a little bit more difficult once I had to start cooking for paying customers but people seem to like them,” Ms Rutherford said.
While Cakes by Amy Rutherford will only be open by appointment at the moment, Ms Rutherford said she had plans to hold cake decorating classes in the future.
Ms Rutherford said she would also be holding an open day on July 22.
