The blaze occurred about 85 kilometres south of Cobar on the Kidman Way on Saturday night.
The truck was taking two refrigerated trailers from Melbourne to Churchill, Queensland, police said.
On board was about 14 tonnes of cattle and sheep carcasses, Inspector Andrew Hurst said.
The driver spotted smoke and then found flames in the refrigeration unit of a trailer.
The trailers were unhitched and the prime mover moved away.
Both trailers became engulfed.
Local fire crews and police from Darling River Local Area Command responded.
Emergency services remained on scene until about 1.30am.
The fire was not suspicious and it was believed to be a fault in the refrigeration unit, Inspector Hurst said.
