The team gained the highest score and will head to Newcastle to compete in the NSW Super Challenge Series later this year.
The result was announced on Tuesday after two competition days at the Dubbo racecourse.
About 440 secondary school students from across the region turned out on Monday and Tuesday for the challenge, designed to test minds and spark interest in careers in science and engineering.
Western Plains Science and Engineering Challenge committee chairman Geoff Smith said it had been another fantastic event in 2016.
"It was great to get feedback from volunteers that our students were enthusiastic and very focused on their tasks," he said.
The runners up on Tuesday were a combined team from Wellington's St Mary's Catholic School and Trangie Central School in second place and Narromine High School in third place.
Challenge education development officer Carly Donohue said the second day had run smoothly.
Dubbo mayor Mathew Dickerson and engineers from Dubbo City Council had been tasked with building a bridge using the same materials as those given to the students but in half the time, she said.
"There were high expectations for them and they managed to succeed," Ms Donohue said.
The challenge continues on Wednesday and Thursday with discovery days for primary school students.
