A police spokesperson said about 10.15pm two men known to each other got into an argument at the Johns Street premises.
It will be alleged one man struck the other in the face while holding a full schooner glass, and the glass broke, splitting open the 49-year-old's eyebrow and causing it to bleed.
A third man tried to break up the fight but in doing so sustained a cut to his abdomen from broken glass on the floor.
Staff then removed the three men from the premises who allegedly continued arguing outside.
All three men were treated by NSW Ambulance paramedics, with the third man taken to hospital for eight stitches to his abdomen.
A 26-year-old was arrested and taken to Coonabarabran Police Station and charged with assault occasioning actual bodily harm.
He was granted conditional bail to appear before Coonabarabran Local Court next month.
