The man was travelling along the Kidman Way about 7.45pm south of Cobar when his vehicle crossed to the wrong side of the road and rolled, police say.
The 61-year-old died at the scene.
The truck, which was southbound, was carrying heavy mining equipment.
Traffic is affected in both directions.
Police from Darling River Local Area Command are investigating the cause of the crash and whether fatigue or a medical episode could have contributed.
They are asking anyone with information about the crash who has not yet spoken to police to contact Crime Stoppers.
Police will prepare a report for the Coroner.
Live Traffic NSW is advising motorists to reduce speed and exercise caution in the area.
On Monday morning Inspector Peter McMenamin, western region traffic tactician, said the Cobar incident had been the only fatal crash in the western region so far for the long weekend.
Operation Slow Down, the state’s Labour Day weekend road safety campaign, will run until 11.59pm on Monday night.
