The pop star was a special guest at Dubbo RSL and took part in the official draw alongside MC and actor Luke Carroll before wowing the crowd with a performance on stage.
She also posed for countless photos, delighting the huge amount of fans, young and old, who were on hand at the dinner.
A big rugby league fan, Mauboy admitted she will be cheering on her North Queensland Cowboys in this weekend's NRL grand final, but was also delighted to be part of the Knockout celebrations.
"I feel extremely proud," she said.
"I'm a big supporter of the NRL and the game and sitting here next to Nathan Merritt and George Rose is something I won't forget.
"I never really get to sit and enjoy an event like this, I'm normally hiding behind doors in the green room waiting to perform so to see it all happen and see Luke Carroll hosting it is exciting."
Mauboy, who shot to fame after finishing as runner-up in Australian Idol in 2006, said she was proud to be part of something which promoted culture and community so much.
The 26-year-old was announced as an ambassador for the NRL in 2013 and even sang the theme song for the 2013 season. Mauboy said she loves what the game does both on and off the field.
"It unites us and that's what this game does and I'm so proud to be a part of it and witness it," she said.
Mauboy confessed she was disappointed she wasn't unable to stick around and watch some of the footy during the weekend.
Her busy schedule, including plenty of promotional work for her new single This Ain't Love, meant she could only stay for the Gala Dinner.
