An exhaustive search has seen applications for the position opened twice, however new club chairman Michael Edwards said he and the board were determined to hire the right candidate.
Edwards assumed his role less than a month ago after the entire board stood down at the club's annual general meeting last month and a new board was elected.
"It's been a bit of a process to try and get someone to fill the role, but we've been lucky that we've had Ian Giffin filling the void in the lead-up to Derby Day and Melbourne Cup Day," Edwards said.
"Ian has been a godsend for us, and in this initial period where we're finding our feet as a brand new board to have someone with his amount of experience is priceless.
"We thought we had someone for the job but circumstances conspired against that a bit, and we didn't want to just settle for the next best person.
"The idea is to get someone that will help us take the club forward in the way we want it to go, and if we have to wait a bit longer to find the right person we're willing to do that."
While Giffin is currently juggling the temporary Dubbo role with his involvement with the Wellington Jockey Club, he admitted he would stick around longer than originally planned if need be.
"If I was 53 rather than 73 then I'd consider doing the job in Dubbo but I'm not," Giffin said.
"This time of year, with Derby Day and Melbourne Cup, it's pretty full-on but it gets a bit quieter after that so if they haven't got anyone by then I'd be open to staying a bit longer, but we'll just have to see what happens between now and then."
