A similar opportunity yielded a flood of applications in the lead up to opening the doors at Parkes in October.
ALDI advertised positions available at Dubbo this week and will hold a recruitment day on Friday.
Its search for "fresh talent" is another step towards trading in the city.
It came less than a fortnight after ALDI Australia reported works at the approved Talbragar Street site were expected to start in March and finish in September.
Yesterday it advertised for an assistant store manager, offering a salary of $55,125, a trainee store manager and store assistants.
"At ALDI, we're known for looking after our people," it said in the advertisement in the Daily Liberal.
"We place a lot of importance on the training and development of our team, as they are a significant part of our success.
"Now as ALDI expands and opens more stores across the country, we are seeking fresh talent to join us."
The German-based chain opened its first store in Australia in 2001 and in the past five years expanded as close to Dubbo as Mudgee and Parkes.
Dubbo consumers had frequently wished for the addition of the self-described "hard discounter" of "high-quality goods" to their shopping landscape.
When ALDI lodged a development application (DA) last year with Dubbo City Council it signalled both jobs and bargains were on the way.
The DA indicated the company, which saw itself as a "grocery store" rather than "shopping centre", would employ up to 20 people.
Thousands of hopefuls applied for work at the $3.5 million store at Parkes and it came down to 12 local residents who would be on site on the opening day, the Parkes Champion Post reported last year.
Job seekers are invited to attend the recruitment day and meet ALDI store managers and area managers.
It will be held at the Dubbo RSL Club starting at 8.30am.
