Melbourne-founded Okami has expanded its footprint with its opening in Cobra Street, only its second location in NSW outside Sydney.
The franchise business leased the restaurant space within the Cascades Motor Inn.
It's in its first week of serving sushi and sashimi platters, teriyaki steak, prawn gyoza and other signature dishes.
Okami NSW general manager Calvin Zhuo said the restaurant was pleased to be able to create job opportunities for Dubbo.
"The core management and settlement team members are experienced staff from existing stores to ensure the same high standard across all stores," he said.
"However, we've already hired some staff locally and they're being trained in store."
Mr Zhuo says they are expecting to hire 10 to 15 staff locally at this stage, for roles including kitchen hands, chefs and waiting staff.
"As there is a whole onsite training program, we welcome people with every background, no matter [if] they're experienced or just getting started," he said.
Okami was established in 2013 in the Melbourne suburb of Hampton.
The Dubbo restaurant is its 35th location, and one of two regional locations, along with Wagga Wagga.
The opening comes within a year of the business's first NSW store, which was in Sydney.
Mr Zhuo said Okami expected to open five to 10 more locations by the end of the year.
"The vision of Okami is to make the Japanese all-you-can-eat style available everywhere and affordable to everyone," he said.
"With around 35 branches being established, we wanted to expand and offer this all you can eat experience to wider regional areas, for the great value of $38.80 and let more people take a culinary trip to Japan without a long journey.
"Dubbo is a dynamic and lovely city to both visit and stay.

"It was a coincidence that we found the location early this year in Cobra Street, nestled in Cascades Motor Inn, and it marks as our second location in NSW outside Sydney."
The restaurant says different from a traditional self-serve buffet where food is presented on the table for a long time, Okami's all-you-can-eat dining allows customers to order dishes from the menu many times, with the food made fresh to order.
Cascades Motor Inn said in a post to social media it was "thrilled to have Okami Japanese Restaurant join us".
