Josie's Fish in a Dish

My grandfather, Terry Charlton, was an avid fisherman and still is at 91 years of age. We dined on fresh fish regularly and this is my Nan's recipe which she used for trout, but I use for any fish.


  • 2 large trout fillets (or flathead, trevalla or similar)
  • 1 finely chopped onion
  • Juice of a large lemon
  • Salt, pepper and nutmeg
  • 1 cup of cream
  • Chopped parsley
  • 1/2 cup of bread crumbs
  • 1 tablespoon of butter

Make sure you dont over cook the fish!

  1. Preheat the oven to 200 degrees
  2. Grease a baking dish
  3. Place fillets skin side down (if skin on)
  4. Sprinkle chopped onion and lemon juice over fillets as well as salt, pepper and nutmeg
  5. Cover in foil and bake for 10 minutes
  6. Pour over cream, sprinkle with parsley, then cover with a thin layer of bread crumbs, dob with butter
  7. Place under a grill until golden brown
