Horizons is a fully-licensed restaurant operated by TAFE NSW Dubbo Certificate III Commercial Cookery and Certificate II, III and IV Hospitality students.
It offers a five-course menu for just $40 per person.
Commercial Cookery teacher Damien Beard and his third-year Commercial Cookery class prepare a diabetic menu on Tuesday.
The menu consists of an appetiser, an entree, a main, dessert and petit fours- dessert number two.
TAFE NSW Commercial Cookery student and apprentice at the Veldt Restaurant Lauren Radburn said the training restaurant provided the opportunity for students to learn and put into practice important skills that would help them lead successful careers in the hospitality industry.
"The kitchen and simulated restaurant is the perfect learning environment and has given me an insight into what it is actually like to run a kitchen," Ms Radburn said.
"Developing and costing a menu and practicing different cooking techniques are just a couple of the skills that I have been able to fine tune at the TAFE restaurant."
Student and apprentice Christina Cooper from Wellington said she enjoyed preparing meals for the TAFE restaurant.
"You should definitely come down to our restaurant and give it a try," Miss Cooper said.
Mr Beard said there was no experience substitute for a full-service dining room with paying customers and real-time demands to prepare students for life in the hospitality industry.
"Menu creation is taken very seriously by the apprentice chefs, with one student each week choosing the menu and acting as head chef in control of the kitchen and his/her fellow apprentices.
"The apprentices are encouraged to create menus using our environmentally sustainable food philosophy using seasonal and locally sourced ingredients," he said.
Dubbo TAFE Tourism and Hospitality Horizons Training Restaurant is open Tuesday evenings until December 3.
