Ms Irwin first came up with the idea of making her last year before retirement the most significant one yet during the last Christmas holidays.
"That's when I come up with most of my best ideas," she laughed.
But she wasn't going to just hand over the cheques without a multicultural fiesta to go with it.
On Thursday St Pius held a multicultural luncheon serving eight different authentic cultural dishes made by cooks from each grade, and parents and staff members, including Mrs Irwin who served her authentic Indian butter chicken.
According to Mrs Irwin, it was the perfect opportunity to celebrate the donations and officially present the checks. "I knew I wanted to give back to the community in some way. I knew it was my last year and I thought I needed to do something to help give back to Dubbo," Ms Irwin said.
"I decided on these four charities because cancer is such a common illness these days that it affects everyone in one way or another. So many families are affected by cancer."
Mrs Irwin said she is blown away by the nature of our "beautiful community" and said the community lives by the motto 'living is giving", and that inspires her.
"Our school community here at St Pius is made up of so many different cultures, so the luncheon was a good opportunity to celebrate the different countries and for the students to learn about them," she said.
Each guest paid a $10 admission fee for adults and $5 for students to cover the costs of the celebrations. People could then eat whatever they liked while experiencing authentic cultural meals.
Each grade chose a country for their stall.
The grade six students chose America; one of their foods was the traditional American Sloppy Joe.
The grade five students chose Germany, and the grade four students chose New Zealand.
Grade three's country of choice was Papua New Guinea, grade two was Mexico, grade one was Italy featuring some delicious pasta meals, and kindergarten chose Australia.
