The victim, who police said was believed to be a 24-year-old from Dubbo, died at the scene in the city's north-east.
About 5am on Saturday officers from Orana Mid-Western Police District were travelling along Cobbora Road near Myall Street and came across a motorcycle that had crashed.
Police believe the motorcycle left the road and crashed into a fence.
The man died at the scene and is yet to be formally identified, police said.
A crime scene was established and an investigation into the circumstances surrounding the crash started.
A report will be prepared for the information of the Coroner.
Cobbora Road, a main thoroughfare through Dubbo, was closed for a number of hours.
By Sunday morning, three bouquets of flowers had been placed in the vicinity of the crash.
Inspector Dan Skelly said on Sunday investigations were continuing.
"It's a reminder for all people to take care on our roads," he said.
