A new $3 million cafe and microbrewery venture is set to provide construction work for multiple Dubbo-based companies as well as ongoing jobs in a win for the city’s economy.

Devil’s Elbow Brewing Company has approval for the 800-square metre building on a greenfield lot in Blueridge Business Park.
Dubbo-based construction company Blueridge Projects will lead the transformation of the 2500-square metre site, located on the city’s eastern outskirts.
Its director Paul Knaggs, along with wife Melissa, are two of the people with the vision for the microbrewery project, along with fellow Dubbo residents Brendan O’Sullivan and David Rich.
Mr O’Sullivan told of the commitment of the Devil’s Elbow Brewery team to engaging local businesses and the community.
“The construction company is Blueridge Projects of Blueridge Business Park and the majority of our contracted companies are local for painting, plumbing, electrical, refrigeration, landscaping and fit-out,” he said.
“Only those with specialty fields in brewery fit-out will be contracted externally such as AeroFloat and Bespoke Brewing Solutions.”
The bulk earthworks were undertaken by local contractors last month, Mr O’Sullivan said.
Crews of workers are set to get building from this week, starting with the footings.
“The box” would be finished in March, and then the fit-out would start, including the installation of the brewery, to sit within 200 square metres of the building, Mr O’Sullivan said.
It is anticipated the business will employ between 30 and 40 people when it starts trading, for roles including cafe staff, kitchen crew, brewers, bar, and floor staff, and include casuals for the peak periods, he says.
The company’s name was inspired by a well-known local spot on the Macquarie River.
“Everything about the venue is bringing in Dubbo and the surrounding area,” Mr O’Sullivan said.
The 10 craft beers the brewery plans to make would be named “based on characters and times in Dubbo”.
“I can’t name names now, they will be released over time, but suffice to say every single beer brings an aspect of Dubbo,” Mr O’Sullivan said.
