The Monkey Bar has brought back its “pop-up DIY gin bar” for Friday and Saturday night for World Gin Day, held on June 8.
It has “21 different types of gin, mostly Australian” on the shelf to spark a round of “cheers” among friends.
Publican Tim Smith invites patrons to explore with six or seven different types of tonic “which will obviously change the flavour of the gin”.
“Then an awesome amount of garnishes for you to play, experiment and taste,” he said.
Mr Smith and wife Cass, who returned to Dubbo last year to pursue their dream of running a pub, said the local response to previous gin nights had been “awesome”.
“People love gin,” Mr Smith said.
“It’s cool, it’s the same as I suppose people loving craft beer or people loving different types of bourbon.”
In March the couple held the Beers to the Bush festival, which attracted almost 700 people.
