Devil's Elbow Brewery has "sprung up" in Blueridge Business Park in the past 10 weeks, with the fit-out of the 800-square metre building coming together.
As well as work on the bar, the floors and the internal walls are going in for the hospitality venue.
The progress on construction is exciting for Brendan O'Sullivan, Paul and Melissa Knaggs and David Rich, the four friends from Dubbo who are turning their dream into reality.
Mr O'Sullivan said the development was "coming together really quickly now" as he and Mrs Knaggs took the Daily Liberal on a tour of Devil's Elbow Brewery.
They reported the brewery was garnering interest in Dubbo and beyond as it moves towards opening in the coming months.
"Even out of town, we're having a lot of support out of town, people commenting and saying 'we've seen your posts and really excited about the brewery'," Mrs Knaggs said.
"We've even had people turning up thinking it's already open...
"We get a lot of people driving past and stopping and looking, which is really exciting."
In the coming weeks the operation will take delivery of some big-ticket items, including a brewkit from China and pizza oven from Italy.

"Yes, they are, we're talking four shipping container-loads of stuff that will arrive, so that will be a bit of a sight to see that get unloaded and then stood up," Mr O'Sullivan said.
"To see all that amount of stainless steel in there will be quite amazing."
Patrons will be close to both the brewing and coffee roasting action, which Mr O'Sullivan says an important part of the experience.
"One of the beauties of craft beer is to actually show our patrons that the beer they're drinking has been brewed on site by the kit they're looking at," he said.
"So pretty much from every angle, inside and out, including the car park, you'll be able to look in and see the brewery, and when brews happen as well."
A "hard and fast" opening date is yet to be set but the cafe area is scheduled to open first, likely to be within the next couple of months.
