The Gaol was closed for two weeks to replace the wood block floor which had been severely damaged by rot and white ants.
Only 30 of the old blocks were able to be relaid alongside the new ironbark.
Wednesday also marked fifty years since the gaol was decommissioned.
Western Plains Regional Council administrator Michael Kneipp said the woodblock floor was a rarity for regional NSW.
While they were popular in the late 1890s around Sydney, Mr Kneipp said there were very few examples of them in regional Australia.
The $80,000 project was funded through the NSW government's Restart NSW Cobbora Transition Fund.
“A total of $1 million has been spent here so that’s a fantastic opportunity to renew this asset which is one of the premier tourist attractions in Dubbo,” Mr Kneipp said.
