Dubbo apprentice chef Brooke Stewart is about to put her original recipe on the line for an opportunity to work with a world culinary leader.

Ms Stewart is one of 34 finalists in the 2016 Proud to be a Chef program.
The second-year apprentice at Dubbo RSL will put her cooking skills to the test in Melbourne for the chance to win a $7500 paid international culinary placement.
During her time in Melbourne, Ms Stewart will also be mentored be culinary experts Anna Polyviou, Josh Pelham and Peter Wright, and eat at some of the city's best restaurants.
"I'm looking forward to actually going to Melbourne, meeting other apprentices that are in the same year as me and seeing where they're at. It'll be good because what I'm learning there I'll be able to bring back," Ms Stewart said.
If chosen as the winner, Ms Stewart said Matt Moran was one of the chefs she would consider finishing her apprenticeship with, however she said she had always wanted to work somewhere like Paris, France.
"You're judged on the original recipe, how well you listen, how well you present yourself, a bit of everything," she said.
Ms Stewart was recently named the Apprentice of the Year at the 2015 Chef's Table Competition and said she was grateful for all the support she had received.
"It's a great opportunity for any apprentice to do this. Without working at the club I would never have had this opportunity. I've worked in different places and nowhere else I've worked has been as supportive as they are here," she said.
The Proud to be a Chef program runs from February 21 to 25.
