About 12.30am Wednesday, the 37-year-old was walking on Castlereagh Street when he was attacked from behind by an unknown number of people.
He sustained several stab wounds.
The assailants left the scene, and the man ran into nearby Charles Street.
Witnesses heard the man calling for help, placed him in a car and took him to Coonabarabran Hospital.
He was later transferred to Dubbo Hospital, where he underwent surgery.
The man is believed to be in a serious but stable condition.
Police from Mudgee Local Area Command are investigating the incident.
They have appealed for anyone with information about the incident to contact Coonabarabran detectives on 6842 7299.
