Barker stopped Newcastle's Jess Batty last month to claim the NSW amateur title in the 63kg weight class, and her bout is sure to be one of the highlights on a card that looks like featuring 16 bouts.
The event is being promoted by Robert 'Gummy' Toomey's Pound For Pound gym, and with fine weather predicted the outdoor setting, combined with some good quality fights, should ensure a great night of boxing.
Graham Wallace helps Toomey train the fighters and said he was keen to see how the gym's established stars and new fighters go on the night.
"It's shaping as a pretty big event really, with fighters coming from all over NSW to compete," Wallace said.
"We've got them coming from Griffith, Wagga, Parkes, Forbes and Nyngan, and there's a few Irish people from Nyngan that are going to be involved as well.
"Ayla's fight will be a big one, because she's got a belt up for grabs and the girl she is fighting she has fought before and it was a tough bout.
"Carol has been fighting about 66-68kg so she's had to drop down to 63kg to take the fight but she's a handy boxer and a good match-up for Ayla."
As well as Barker, a number of locals will make their first foray into the ring, including brothers Jack and Will Clow.
The youngsters are well-known in Dubbo for their battle with cystic fibrosis, and while their events will only be exhibition bouts Wallace said it's great to see the boys taking part.
"The Clow boys have been training at the gym for a while, and to be honest you wouldn't know there was anything wrong with them," he said.
"They train hard and I think the training they do is good for their health as well. It gets them out doing something and they always put in 100 per cent so it's great for them.
"We've also got young Parker Watson, who plays footy for South Dubbo under-15s, having a fight on the night and others like Dave Pollard and Steven Wilson so it should be a top night with plenty of local interest."
Tickets for the fight night can be purchased prior to the event for $20 or at the door for $30, with the doors to open at 6pm and the first bout to commence at 7pm.
