Ryan Lee Maas, 31, Scott Thomas Kilby, 42, Ryan Bernard Williams, 29, Jamie Gray, 48, and James Gray, 26, were arrested after police were called to Talbragar Street at 2.45am on Sunday, June 14.
They have all pleaded not guilty.
Prosecution facts allege Kilby, Maas, Williams and Jamie Gray were involved in a physical altercation in a kebab shop before the violence spilled into the street.
CCTV footage showed Maas and Williams walking outside with a number of onlookers. Maas is alleged to have punched Gray in the face and head with a closed fist. Gray is alleged to have returned a number of punches.
Police allege Williams and Kilby became involved, throwing multiple punches at each other. A group of about 20 people are alleged to have joined in the affray, physically fighting with each other on the footpath.
Maas and Kilby are alleged to have run onto the road and shaped up to each other before Maas swung multiple punches at Kilby who returned punches, all connecting with Maas' head.
Police allege Maas swung a further blow causing Kilby to fall to the ground. Kilby got up and fell against the concrete gutter when he tripped while walking away.
A larger group began to form around Maas and Williams as they stood on the footpath. Both men are alleged to have swung multiple punches at Jamie Gray's head and face.
Police arrived and began to separate the brawl participants. Most were well intoxicated after drinking earlier at nearby hotels.
Maas and Williams were placed under arrest. Both had bloodied faces.
While police were trying to restore calm Maas is alleged to have continued to shout racist taunts towards the crowd.
Numerous onlookers yelled as police had to hold Maas back, even when handcuffed. He was forced to the ground in an attempt to stop him returning to the kebab shop.
Kilby was lying on the footpath complaining of intense pain to his chest and ribs. There was a large amount of blood on his face and head.
Gray's son James and a number of other men ran towards Maas and Williams. Police activated capsicum spray into the face of James Gray when they feared he was going to assault Williams.
The men following James Gray dispersed as he was arrested, handcuffed and treated by ambulance paramedics.
James Gray is alleged to have told police he came to help his father after receiving a phone call from a relative.
Maas and Kilby were taken to hospital.
Police allege the brawl was initiated by a racial dispute and people in the vicinity would have feared for their safety.
The five men were excused from appearing in person when the charges were brought before Magistrate Andrew Eckhold this week.
The charges were set down for hearing on February 6.
Bail was continued in each case.
