The qualified health coach and My Kitchen Rules judge is touring Australia and New Zealand early next year, stopping in Dubbo on March 19.
"The last time we were in Dubbo was fantastic. I think we had 600 people last time and we're hoping to get that again," Mr Evans said.
He said the event will be a fun, simple interactive class to get people inspired about paleo.
"After our first tour I feel we covered off the science in depth and now this is all about putting it into a practical presentation and offering affordable solutions for busy families and people."
Mr Evans said the paleo way is not a diet, but a lifestyle choice.
"It encourages people to know where their food comes from... if they know where their food comes from they naturally gravitate towards foods that haven't been treated by pesticides."
He cited benefits such as sustaining weight, general feelings of mental clarity and being able to reduce some medications or cut them out completely, for those who embrace the lifestyle.
The tour will also feature fitness expert Luke Hines and a number of international guests who have yet to be revealed.
Mr Evans said the event will be an eye opening experience for people as they lean new recipes and cooking techniques while they have a ball.
