Surrounded by close friends and family, her son, Bob Stanley, said he was very proud of what his mother had achieved in her life.
Born in an old hospital which very few would remember on Bourke Street, Mrs Stanley grew up in the Coolbaggie district on her parent's property.
A farm girl at heart, Mr Stanley said his mother met her first husband Frank Roberts, who she lost to tuberculosis in 1947 after the family had shifted to Katoomba.
"Several years later she met my father Robert Stanley," Mr Stanley said.
The lovebirds married and had their first bundle of joy, baby Bob, in 1953.
The Stanleys then relocated back to Dubbo, where they set up camp at a property on the Collie Road.
Kath flourished in the garden, which was renowned around the area, Mr Stanley said.
When Kath and her husband Robert were not working on the property, they enjoyed the odd trip in their caravan.
"Mum and Dad did a trip around Australia in the caravan," Mr Stanley said.
He said they were also very fond of holidaying at Harvey Bay.
"Mum's maiden name is McIntyre, so along with all the caravan travels, they also made their way to the British Isles, where visited some ancestral sites in Scotland."
Now a resident at Orana Gardens Retirement Village, Mr Stanley said Kath's entire family all have a treasured memento from their 100-year-old grandmother.
"She's a talented crocheter, so every family member has something she's made," Mr Stanley said.
