Some members of the Independent Education Union (IEU) will hold a one-hour stop work from the start of business.
"The stop work is to defend quality Catholic education, under threat from a substandard enterprise agreement proposed by the Catholic employers," an IEU spokesperson said.
The action is the latest in a series of stoppages carried out across NSW and ACT.
St Johns, St Laurence's and St Pius X primary schools in Dubbo and St Mary's Catholic School in Wellington are among those taking part.
