Fifty-one-year-old Raymond Isaac Roff and 24-year-old Sarah Renea Tarrant have been charged with the murder of the missing 33-year-old.
Roff is also charged with possessing an unauthorised firearm and not keeping a firearm safely.
No pleas were entered, and the pair remains in custody prior to their next appearance via audiovisual link on October 9, 2013.
Alois Rez was reported missing on Thursday, August 1, 2013.
Police had been told he was last seen about 10.30pm Sunday July 28 at his Alfred Street home.
State Crime Command's Homicide Squad was called in because it was considered unusual for Mr Rez to be missing for such a long period of time.
Last week police carried out searches at the Alfred Street property, a house in Fitzroy Street and a property on Sappa Bulga Road on the outskirts of Dubbo.
At the rural property, an earthmoving contractor was called in and a dam was drained as part of the investigation.
On Friday, police told assembled media they feared that Mr Rez had met with foul play, and appealed for information from members of the public that could help with their investigation.
Meanwhile, police want anyone who has information about a distinctive vehicle they believed was important to the continuing homicide investigation to come forward.
The vehicle is described as a black Great Wall station wagon with a tow ball, silver roof rack, fog lights and yellow and black number plates.
"If anyone sighted this vehicle in Dubbo or surrounding areas from Sunday July 28 until Saturday August 3, please call Crime Stoppers or Dubbo detectives," Orana Local Area Command Detective Sergeant Scott Baker said.
